We used to milk our native Swedish mountain cows years ago, but more recently we’ve kept them for endless beef supply. Now a new step in our journey begins, and with it the closing of a circle where we can truly produce 100% of our diet from the farm. We can easily avoid grain, which we care not to produce, but raw milk cheeses and other raw or fermented milk products are practically impossible to come by from 100% grassfed cows. In a world where milk is so awfully bastardized, it’s exciting! |
